Training objective: To provide participants with comprehensive knowledge of the hygiene and technological requirements for the production and processing of milk from small ruminants, including opportunities for improving production quality.

    • Farm size and technical equipment
  2. Milk quality
    • Hygiene requirements, preparation for milking
    • Standards and certification for goat and sheep milk
    • Microbiological quality and somatic cell count
  3. Factors affecting quality
    • Changes after modification of milking technology
    • Possibilities for improving microbiological parameters

Technological part

  1. Basic technological principles
    • Principles of milk processing on farms and product overview
  2. Raw materials and their properties
    • Raw material selection: key requirements for milk composition
  3. Hygiene standards and equipment
    • Hygiene principles in dairy production
    • Basic laboratory equipment needed for quality control
  4. Practical demonstrations and applications
    • Most common technological mistakes and their solutions
    • Practical demonstrations of milk processing
    • Overview and use of suitable milk cultures for small ruminants
